Jollof Rice

Ingredients

  • 1 cup basmati rice

  • 1/4 onion, finely chopped

  • 1 tbsp tomato paste

  • 1 tbsp olive oil

  • 1 cup low-sodium vegetable broth or water

  • 1/4 tsp paprika (optional for extra flavor)

  • 1/4 tsp turmeric or curry powder (optional for color and flavor)

  • Salt and pepper to taste

Preparation

  1. Prepare the rice:

    • Rinse the basmati rice under cold water until the water runs clear. Set aside.

  2. Sauté the aromatics:

    • In a medium saucepan, heat the olive oil over medium heat.

    • Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

  3. Add tomato paste and spices:

    • Stir in the tomato paste, paprika, and turmeric (if using).

    • Cook for 1-2 minutes, stirring constantly, to allow the tomato paste to caramelize slightly and develop its flavor.

  4. Cook the rice:

    • Add the rinsed basmati rice to the pan and stir to coat the rice in the tomato paste mixture.

    • Pour in the vegetable broth (or water) and season with salt and pepper to taste.

    • Bring the mixture to a boil, then reduce the heat to low.

    • Cover the pan and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

  5. Fluff and serve:

    • Once the rice is cooked, remove the pan from heat and let it sit, covered, for 5 minutes.

    • Fluff the rice with a fork to separate the grains.

    • Serve hot as a side dish or as a base for your favorite protein or vegetables.
