Ingredients
1 cup basmati rice
1/4 onion, finely chopped
1 tbsp tomato paste
1 tbsp olive oil
1 cup low-sodium vegetable broth or water
1/4 tsp paprika (optional for extra flavor)
1/4 tsp turmeric or curry powder (optional for color and flavor)
Salt and pepper to taste
Preparation
Prepare the rice:
Rinse the basmati rice under cold water until the water runs clear. Set aside.
Sauté the aromatics:
In a medium saucepan, heat the olive oil over medium heat.
Add the chopped onion and sauté for 3-4 minutes until softened and translucent.
Add tomato paste and spices:
Stir in the tomato paste, paprika, and turmeric (if using).
Cook for 1-2 minutes, stirring constantly, to allow the tomato paste to caramelize slightly and develop its flavor.
Cook the rice:
Add the rinsed basmati rice to the pan and stir to coat the rice in the tomato paste mixture.
Pour in the vegetable broth (or water) and season with salt and pepper to taste.
Bring the mixture to a boil, then reduce the heat to low.
Cover the pan and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Fluff and serve:
Once the rice is cooked, remove the pan from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork to separate the grains.
Serve hot as a side dish or as a base for your favorite protein or vegetables.
