Ingredients
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
Zest of 1 lemon
Juice of 1 lemon
1 tbsp fresh parsley, chopped
1/2 tsp dried oregano
1/4 tsp red pepper flakes (optional, for heat)
Salt and pepper, to taste
4-6 wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before using)
Preparation
Prepare the marinade:Ā In a bowl, combine olive oil, garlic, lemon zest, lemon juice, parsley, oregano, red pepper flakes (if using), salt, and pepper. Stir well to mix.
Marinate the shrimp:Ā Add the shrimp to the bowl and toss them in the marinade. Cover and refrigerate for at least 15-30 minutes (or up to 1 hour for more flavor).
Preheat the grill or grill pan:Ā Preheat your grill to medium-high heat. If you're using a grill pan, preheat it on the stove over medium-high heat.
Assemble the skewers:Ā Thread the marinated shrimp onto the skewers, placing them in a single layer.
Grill the shrimp:Ā Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque.
Serve:Ā Remove the shrimp from the skewers and transfer them to a plate. Serve immediately, garnished with additional chopped parsley or lemon wedges, if desired.
