Okra and Tomatoes

Ingredients

  • 2 cups okra (sliced)

  • 1 can diced tomatoes (15 oz)

  • 1 onion (chopped)

  • 1 tbsp olive oil

Preparation

  1. Heat olive oil in a large pan over medium heat.

  2. Add the chopped onion and sautƩ until softened, about 3-4 minutes.

  3. Add the sliced okra to the pan and cook, stirring occasionally, for 5-7 minutes until the okra softens.

  4. Add the canned diced tomatoes (with juices) to the pan, and stir to combine.

  5. Cover and simmer for 10-15 minutes, allowing the flavors to meld together and the okra to cook thoroughly.

  6. Season with salt, pepper, and other spices (e.g., garlic, cumin, or paprika) to taste.

  7. Serve warm as a side dish.2 cups okra (sliced)
