Ingredients
2 cups okra (sliced)
1 can diced tomatoes (15 oz)
1 onion (chopped)
1 tbsp olive oil
Preparation
Heat olive oil in a large pan over medium heat.
Add the chopped onion and sautƩ until softened, about 3-4 minutes.
Add the sliced okra to the pan and cook, stirring occasionally, for 5-7 minutes until the okra softens.
Add the canned diced tomatoes (with juices) to the pan, and stir to combine.
Cover and simmer for 10-15 minutes, allowing the flavors to meld together and the okra to cook thoroughly.
Season with salt, pepper, and other spices (e.g., garlic, cumin, or paprika) to taste.
Serve warm as a side dish.2 cups okra (sliced)
