Spanish Garlic Shrimp (Gambas al Ajillo)

Ingredients

1 lb large shrimp, peeled and deveined

4 tbsp olive oil

6 garlic cloves, thinly sliced

1 tsp red pepper flakes (optional)

1/2 tsp smoked paprika

Salt to taste

Freshly ground black pepper to taste

Juice of 1/2 lemon

Fresh parsley, chopped (for garnish)

Crusty bread (optional, for serving)

Preparation

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the sliced garlic and sautƩ for about 1-2 minutes, stirring constantly, until the garlic is golden brown and fragrant. Be careful not to burn it.

Add the red pepper flakes and smoked paprika, and cook for an additional 30 seconds to release their flavors.

Increase the heat to medium-high and add the shrimp to the skillet. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and are fully cooked.

Season with salt and black pepper to taste.

Squeeze the lemon juice over the shrimp and stir to combine.

Remove from heat and garnish with chopped parsley.

Serve immediately with crusty bread for dipping into the flavorful garlic oil, if desired.
