  • 4 Portobello mushrooms (stems removed and cleaned)

  • 1/2 cup spinach (fresh or frozen, chopped)

  • 1/4 cup ricotta cheese

  • 1/4 cup mozzarella cheese (shredded)

  • 1 tablespoon olive oil (for brushing)

  • Salt and pepper to taste

  • Garlic powder (optional, for added flavor)

Preparation

  1. Preheat the oven: Preheat your oven to 375°F (190°C).

  2. Prepare the mushrooms: Gently remove the stems from the Portobello mushrooms and scrape out the gills using a spoon. Brush the caps with olive oil on both sides and place them on a baking sheet.
