Blueberry & Banana Oats

Ingredients

  • 1/2 cup rolled oats

  • 1 cup low-fat milk or almond milk (unsweetened)

  • 1/2 ripe banana, sliced

  • 1/4 cup fresh or frozen blueberries

  • 1/2 tsp cinnamon

  • 1/4 tsp vanilla extract

  • 1 tsp chia seeds or flaxseeds (optional, for added fiber and omega-3s)

  • 1 tsp honey or maple syrup (optional, for sweetness)


Preparation

  1. Cook the oats: In a small saucepan, combine the oats, milk, and a pinch of salt. Bring to a simmer over medium heat, stirring occasionally. Cook for 5-7 minutes, or until the oats are tender and the mixture has thickened.

  2. Add the fruit: Once the oats are cooked, stir in the banana slices, blueberries, cinnamon, and vanilla extract. Cook for another 2-3 minutes, allowing the fruit to soften and release its juices.

  3. Sweeten and add seeds: If desired, stir in honey or maple syrup for added sweetness. Then, add chia seeds or flaxseeds for extra nutrients and fiber.

  4. Serve: Remove from heat and spoon the oats into a bowl. Top with extra fresh blueberries, a few banana slices, and a sprinkle of cinnamon for garnish, if desired.
