Ingredients
2 hard-boiled eggs
1/2 ripe avocado
1 tablespoon mayonnaise (preferably low-fat or olive oil-based)
Pepper (to taste)
Preparation
Prepare the eggs: Peel the hard-boiled eggs and chop them into small pieces.
Mash the avocado: In a separate bowl, scoop out the flesh of the avocado and mash it with a fork until smooth.
Combine ingredients: Add the chopped eggs to the mashed avocado. Stir in the mayonnaise, and season with salt and pepper to taste.
Serve: Serve immediately on whole-grain toast, crackers, or as a filling for a wrap, or refrigerate it for later use.
