Ingredients

  • 4 cups cabbage, shredded

  • 1 medium carrot, julienned or thinly sliced

  • 1 small onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 tbsp sesame oil (for cooking)

  • 2 tbsp low-sodium soy sauce

  • 1 tsp rice vinegar (optional, for a tangy flavor)

  • 1/2 tsp ground ginger (optional, for extra warmth)

  • 1/2 tsp crushed red pepper flakes (optional, for a bit of heat)

  • 1/4 cup water or low-sodium vegetable broth

  • Sesame seeds (optional, for garnish)

Preparation

  1. Prepare the vegetables: In a large skillet or wok, heat the sesame oil over medium heat.

  2. Sauté the onion and garlic: Add the sliced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent and the garlic is fragrant.

  3. Add carrots and cabbage: Add the julienned carrots and shredded cabbage to the skillet. Stir-fry for 5-7 minutes, tossing frequently, until the cabbage softens but still retains some crunch.

  4. Season the stir-fry: Add the low-sodium soy sauce, rice vinegar, ground ginger, and crushed red pepper flakes (if using). Stir to combine. Add water or vegetable broth to prevent burning and help the cabbage cook through.

  5. Cook and finish: Continue cooking for another 3-5 minutes, stirring occasionally, until the cabbage is tender but still vibrant.

  6. Garnish and serve: Transfer the stir-fry to serving dishes and sprinkle with sesame seeds, if desired. Serve warm.
