Greek Chicken Souvlaki

Ingredients

  • 2 boneless, skinless chicken breasts (cut into cubes)

  • 1/4 cup plain Greek yogurt (unsweetened)

  • 2 tbsp olive oil

  • 2 tbsp lemon juice

  • 2 cloves garlic, minced

  • 1 tbsp dried oregano

  • 1/2 tsp ground cumin

  • 1/4 tsp paprika

  • Salt and black pepper, to taste

  • 4 whole wheat pita bread or wraps

  • Fresh parsley, chopped (for garnish)

  • Optional: Tzatziki sauce for serving (Greek yogurt, cucumber, garlic, lemon juice, dill, and olive oil)

Preparation

  1. Prepare the marinade: In a bowl, combine Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Mix well until smooth.

  2. Marinate the chicken: Add the chicken cubes to the marinade, tossing to coat the chicken evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  3. Cook the chicken: Heat a grill pan or outdoor grill over medium-high heat. Lightly oil the grill or pan to prevent sticking. Thread the marinated chicken cubes onto skewers. Grill the chicken for 3-4 minutes on each side, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).

  4. Serve: Remove the chicken from the skewers and serve with whole wheat pita bread or wraps. Garnish with fresh parsley and drizzle with tzatziki sauce, if desired.
