Poached Dill & Lemon Salmon

Ingredients

  • 2 salmon fillets (4-6 oz each)

  • 1 tbsp fresh dill (or 1 tsp dried dill)

  • 1 lemon (sliced)

  • 2 cups water

  • 1 tbsp olive oil

  • Salt and pepper, to taste

Preparation

  1. Prepare the Poaching Liquid: In a large skillet or shallow pan, add the water, olive oil, and a pinch of salt and pepper. Heat over medium heat.

  2. Add Flavor: Once the water is gently simmering, add the lemon slices and dill to the pan. Stir to combine and let the liquid heat for another 1-2 minutes to infuse the flavors.

  3. Poach the Salmon: Gently place the salmon fillets into the simmering water. Cover the pan with a lid and reduce the heat to low. Let the salmon poach for 10-12 minutes, or until the fish is opaque and flakes easily with a fork. Be sure not to let the water boil, as this can cause the salmon to dry out.

  4. Serve: Once the salmon is cooked, carefully remove it from the pan and plate. Spoon some of the poaching liquid and lemon slices over the top of the salmon for extra flavor.


This dish can be served on its own or with a side of steamed vegetables, quinoa, or a light salad for a heart-healthy meal. The poaching method ensures the salmon remains moist and tender, while the dill and lemon add a fresh, bright flavor.
